Ingredients

Serves 4

500 g grated Gruyère cheese
10 slices heirloom tomatoes, 2cm thick
5  large eggs
200 ml milk
8 slices of day-old bread, 2cm thick
  pinch of nutmeg 
  butter

Method

 

Preheat oven to 200 degrees Celsius.

 

Whisk eggs, milk, and nutmeg together in a medium sized bowl. Melt butter in a large skillet over medium high heat. Dip the bread into the milk and egg mixture, be sure to let the bread soak up some of the liquid.

 

Place the bread into a hot skillet and fry until golden, then flip the bread over and brown the other side. Place half of the bread on a sheet pan lined with parchment paper and top with tomato grated cheese. Bake until cheese is bubbly.
